From The Winemaker
Each year, Pinot Gris is consistently our first varietal to reach optimum maturity. Because of the exceptional cleanliness of the grapes in 2021, we change the way we work on the coarse lees pre-fermentation to allow more extraction. This resulted in a gain of floral aromatics. The fermentation was managed in a similar style as the previous years, this wine was aged 6 months in a stainless steel tank. Best when served chilled, the soft mouth feel will open up to lingering rose and litchi aromas.
